I found a simple recipe for pumpkin bread a while ago (and cannot find it now) where the ingredients were a can of pumpkin, a box of spice cake mix, and a couple other things. I think they was water and chocolate chips, but I’m not sure, and I don’t know the amounts. The loaf came moist and rich. If anyone finds the recipe I’m looking for, please tell me before Halloween.

Saturday, September 4th, 2010If you love chocolate cake you need to add this Chocolate Spice Cake to your recipe collection as one can never have too many chocolate cake recipes. This cake is different because of the spices–just enough to make it special without being overpowering. Surprise your family and friends with this different chocolate cake. It’s up to you whether or not to give away your secret for this delicious cake. We won’t tell what spices it contains or that it is moist because of the applesauce! This cake is just as yummy as a glazed Bundt cake or as a frosted sheet cake.
CHOCOLATE SPICE CAKE
1 3/4 cups unsifted all-purpose flour
1 3/4 cups sugar
1/3 cup cocoa
2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
1/8 tsp salt
1 1/2 cups applesauce
1/2 cup milk
1/2 cup butter, melted
1 tsp vanilla extract
1/2 cup raisins
1 cup chopped nuts, optional
Vanilla glaze
In a large mixing bowl, combine flour, sugar, cocoa, baking soda, cinnamon, nutmeg, allspice, and salt. Stir in the applesauce, milk, butter, and vanilla extract; combine thoroughly. Add raisins and the nuts, if desired.
Pour batter into greased and floured 9-cup Bundt pan OR a 9 x 13-inch baking pan. Bake at 350 degrees for 55 to 60 minutes if using a Bundt pan. If using an oblong pan bake for 40 to 45 minutes or until a wooden toothpick inserted in the center comes out clean. Cool 15 minutes; remove from Bundt pan and cool on a wire rack. Leave oblong cake in pan.
Glaze Bundt cake with Vanilla Glaze or frost oblong cake as desired.
VANILLA GLAZE:
1 tbsp softened butter
1 cup powdered sugar
1/2 tsp vanilla
1 to 2 tbsp milk
Combine butter, powdered sugar, and vanilla. Add milk gradually until glaze is smooth and of desired consistency. Drizzle over the Bundt cake.

In this video, Betty demonstrates a penuche candy icing for the Applesauce Spice Cake, uploaded yesterday. Penuche is known in the Southern states, as well as parts of New England. It is a wonderful, caramel flavored candy, that can be used as icing, and it goes perfectly with Applesauce Cake or Spice Cake, so I put it on an Applesauce Spice Cake!!! Ingredients: 1 stick butter or margarine 1 cup light brown sugar, firmly packed 1/4 cup milk 2 cups confectioner’s sugar hot water, as needed In a medium-sized saucepan, melt 1 stick of butter or margarine. Add 1 cup brown sugar, and bring to a boil. Lower the heat, and boil for 2 minutes, stirring constantly. Add 1/4 cup milk, and bring back, just to a boil, stirring constantly. Cool to lukewarm. Gradually add 2 cups confectioner’s sugar, as needed. (You may not need all of it.) Beat the candy until it is of spreading consistency. If it is too thick, add a little hot water; if too thin, add more confectioner’s sugar. Spread it generously on my 9-inch square Applesauce Spice Cake. (This is enough icing to spread a two-layer cake.) Very Southern! Very delicious!!!
How to make “healthy” organic cake mix more moist?
Thursday, July 22nd, 2010I’m either looking for an excellent brand of organic cake mix (various flavors – chocolate, yellow, spice, carrot) that will be nice and moist. OR any suggestions on how to make the cake fluffier and more moist, without adding the very garbage we’re trying to avoid.
Instead of oil and eggs, I’m using applesauce and egg whites. This works calorie and heart-healthy-wise, but not flavor-wise. The cake turns out dense and dry.
Someone suggested adding an organic pudding mix to the batter, but I wanted to see what my friends at Yahoo Answers would come up with. Thanks!

Vintage Recipes: Roasted Pork Tenderloin With Vegetables and Apple Spice Cake
Monday, July 12th, 2010Comfort food is making a big comeback and what says comfort better than this old-fashion recipe for roasted pork tenderloin with vegetables meal? Perhaps adding another old recipe for an Apple Spice Cake for dessert. Yep, that’s it. Double comfort.
ROASTED PORK TENDERLOIN AND VEGETABLES
2 pork tenderloins, about 3/4 lb each
2 lbs red potatoes, scrubbed and quartered
1 lb carrots, halved and cut into 2-inch pieces
1 medium onion, cut into wedges
1 tbsp olive oil
2 tsp dried rosemary, crushed
1 tsp sage
1/2 tsp salt
1/4 tsp pepper
Place tenderloins in a shallow roasting pan that has been lightly greased. Arrange the vegetables around the pork; drizzle with the oil. Combine the seasonings and sprinkle of the pork and the vegetables. Bake, uncovered, in a 450 degree oven for about 40 minutes or until a meat thermometer reads 160 degrees. Stir the vegetables occasionally during the cooking process.
Makes 6 servings. 3-oz of meat + 1 cup of vegetables equals 331 calories, 40 g carbs, and 28 g protein.
This is an old newspaper clipping from the Bedford Daily Times Mail of Bedford, Indiana. The clipping doesn’t say but I imagine the recipe was in an “Appleacres” ad. Appleacres is a local business there that specializes in apples from their own apple orchards.
Mix together 2 cups chopped apples, 1 cup sugar and let stand for 15 minutes.
Add:
1 egg
1 cup flour
1/2 cup nuts
1/2 cup raisins
pinch of salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp soda
1/2 stick butter
Mix all together, pour into a greased pan and bake at 350 degrees for 25 to 30 minutes. Delicious!
