How to Make Tasty Little Individual Cakes: Chocolate Molten or Fruity Topped Tiny Cheesecakes

It is always fun to serve individual cakes to family and friends.  These little cakes are great for brunches, or dessert bars.  And the kids, both the little ones and the big ones, love their own little cakes.  The Chocolate Molten Cakes are turned upside down on serving plates and served warm.  The little Fruit Topped Cheesecakes are very portable in their own little paper cups.  Whether you prefer the warm chocolate or the cool cheesecake, you are sure to enjoy your own mini cake.

INDIVIDUAL MOLTEN CHOCOLATE CUSTARD CUP CAKES

1/3 cup butter, cubed
1/3 cup cocoa powder
3 squares (1-oz each) semisweet chocolate, coarsely chopped
3 eggs
7 egg whites
1 cup confectioners’ sugar
1/2 cup packed brown sugar
1 1/2 tsp vanilla extract
1/3 cup flour
1/8 tsp salt

Preheat oven to 450 degrees.

Place the butter, cocoa, and chocolate in a microwave-safe bowl. Microwave the mixture at 50% power for 20 seconds; stir until smooth. Add the eggs, egg whites, confectioners’ sugar, brown sugar, and vanilla. Stir the mixture to mix well. Stir in flour and salt until blended. Pour into seven 6-ounce custard cups that have been coated with nonstick cooking spray. Place custard cups on a baking sheet. Bake at 450 degrees for 10 to 12 minutes or until a thermometer inserted near the center reads 160 degrees. Remove from the oven and let stand for 1 minute. Run a knife around the edge of the custard cups and invert onto individual dessert plates. Serve immediately.

FRUIT TOPPED TINY CHEESECAKES

CRUST:
1 cup Graham cracker crumbs
2 tbsp sugar
4 tbsp butter, melted

FILLING:
1 cup sugar
2 tbsp lemon juice
3 pkgs (8-oz)cream cheese, softened
3 eggs
2 tsp vanilla

TOPPING:
1 can (21-oz) fruit pie filling of your choice ie cherry, peach, strawberry, blueberry

Preheat oven to 350 degrees. Line a 12-cup muffin tins with cupcake liners; set aside.

In a mixing bowl, combine the Graham cracker crumbs, the 2 tablespoons of sugar, and the butter. Divide the mixture evenly among the lined muffin tins and press the crumbs to form a solid layer in each cupcake liner. Bake for 3 to 5 minutes at 350 degrees. Cool completely.

Reduce oven heat to 325 degrees.

In the bowl of an electric mixer, beat cream cheese on medium-high speed until light and fluffy. Add the 1 cup of sugar and continue to beat until smooth. Scrape the inside of the bowl to be all the mixture is in the bowl. Reduce the speed to low and add the eggs, lemon juice, and vanilla; mix just to incorporate. Fill cupcake liners 2/3 full with the cream cheese mixture. Bake 20 to 25 minutes or until a knife inserted in center comes out clean. Cool completely on a wire rack. Top with the fruit filling and refrigerate until ready to serve.

Recipe for Grandson’s Favorite Coca-Cola Cake

This cake gets its name from my grandson who absolutely loves this cake.  It is his favorite cake that he always wants grandma to make.  Give it a try.  This is a great chocolate cake.  No doubt it will become a favorite at your house, too.

GRANDSON’S FAVORITE COCA-COLA CAKE

2 1/3 cups flour
2 cups sugar
2/3 cup butter
2 tbsp cocoa
1 cup coke
1 tsp baking soda
2 eggs
1/2 cup buttermilk
2 tsp vanilla
1 1/2 cups mini marshmallows

Preheat oven to 350 degrees. Grease and lightly flour a 9 x 13 x 2-inch baking pan.

In a large bowl, stir together the flour, sugar, and baking soda; set aside.

In a medium saucepan, bring the Coca-Cola, butter, and cocoa to boiling over medium heat. While hot, add to the four mixture; stir just until combined. Add the eggs, buttermilk, and vanilla; stir until combined. Gently stir in the marshmallows (they will float to the top). Pour the batter into the prepared baking pan. Bake at 350 degrees for approximately 30 minutes or until a wooden toothpick inserted in center comes out clean. Set pan on wire rack. Immediately spread the following topping over the hot cake.

TOPPING:

1/2 cup butter
1/4 cup cocoa
1/4 cup Coca-Cola
2 1/2 cups sifted powdered sugar
1 tsp vanilla
1 cup chopped nuts

Bring the butter, cocoa, and Coca-Cola to boiling in a saucepan. Remove from heat and add the powdered sugar and vanilla. Mix with a wire whisk until combined. Stir in the nuts and spread over the hot cake.

Chocolate-cherry Heart Cake Made With Rum

If you want to really impress your loved one with a special cake, try this wonderful chocolate cake. This cake also works well for bridal showers and parties as well as other special occasions. The secret ingredient of this Chocolate-Cherry Heart Cake is rum. This ingredient makes this chocolate cake stand out from all the rest.

CHOCOLATE-CHERRY HEART CAKE

DARK CHOCOLATE ICING:
12 oz semisweet chocolate, chopped finely
6 tbsp unsalted butter, cut into pieces
1 cup heavy cream
3 tbsp rum (or use 1 tsp rum flavoring)
1 cup cherry preserves
1 semi-sweet (4 oz) chocolate bar

Place 12-ounce chocolate and butter in a large bowl. In a small saucepan, bring cream to a boil over medium heat, stirring occasionally. Pour cream over the chocolate and butter and shake the bowl gently to distribute the cream evenly. Let sit for 2 to 3 minutes. Whisk together by hand until smooth. Cover the surface of the icing with plastic wrap and set aside in a cool spot to set but do not refrigerate. When set, the icing should have the consistency of a firm pudding. Set aside the preserves until the cake is to be assembled.

With a vegetable peeler, shave the chocolate bar into a freezable bowl. Place in the freezer until ready to decorate the cake.

DARK CHOCOLATE CAKE:
1 stick unsalted butter, softened
3/4 cup granulated sugar
1/2 cup light brown sugar, packed
2 large eggs
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup cocoa powder
1/2 cup sour cream
1/4 cup rum
3/4 cup boiling water

Preheat oven to 350 degrees. Butter and line with parchment paper the bottom of single layer heart-shaped pan. Set aside.

In the bowl of an electric mixer cream butter, granulated sugar, and brown sugar together until light and fluffy. Add eggs, one at a time, blending until smooth after each.

Sift together the flour, baking soda, baking powder, salt, and cocoa. In a separate small bowl, blend together the sour cream and rum. With mixer on low, alternately add the dry ingredients and the rum mixture, beginning and ending with the dry ingredients. Slowly pour in the water and mix until well-blended. Pour the batter into the pan and shake gently to level. Bake 30 to 40 minutes, until center of cake springs back when lightly touched. Remove from the oven and let cool for 5 to 6 minutes in the pan then invert onto a wire rack to cool completely.

To Assemble:
When the cake is completely cool, invert cakes onto a serving plate. Using a hand held whisk, stir the cooled chocolate icing, adding the rum gradually. Once rum is incorporated, whisk vigorously for a few seconds until the icing is slightly lighter in color. Spread 2/3 of the icing over the sides and top of the cake. Take chocolate shaving from the freezer and adhere shaving to the sides of the cake. Spread the cherry preserves gently over the top of the cake in a heart shape design, leaving at least a 1-inch border around the edges. Use the remaining icing to make a decorative design around the cherry heart and around the top edge of the cake.

How To Make A Two-Toned Pound Cake Recipe

This two-toned pound cake has a traditional vanilla layer, and then a delicious chocolate layer. The cake will take approximately 15 minutes to prepare and another 40 to 50 minutes to bake.

The recipe was given to me about 20 years ago by a local Mennonite woman, who was known in the neighborhood to be a great baker. She would often sell her made from scratch baked goods at our local farmer’s market.

When it comes to making pound cakes, I always recommend using genuine butter, as you don’t get the same taste results when you use margarine.

Ingredients:

1 1/4 cups butter, softened
2 1/2 cups granulated sugar
5 eggs
2 1/2 cups all-purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon salt
1 cup less 2 tablespoons milk
2 teaspoons vanilla extract
1/4 cup cocoa powder
confectioner’s sugar

Preheat oven to 325 degrees.

In a large bowl, cream together the softened butter with the granulated sugar, until light and fluffy. Beat in the eggs, one at a time, creaming together after each addition.

In a large bowl, sift together the all-purpose flour, baking powder and salt. Add this mixture alternately with the milk and vanilla, to the creamed mixture in your first bowl. Take out 2 cups of the cake batter and blend the powdered cocoa into the 2 cups you just removed.

Lightly spray a 10″ round tube pan with nonstick cooking spray. Alternately spoon the light and chocolate batters into the tube pan. Bake in a preheated 325 degree oven for 40 minutes or until the cake tests done in the center. Remove from oven and let cool for 15 minutes in the pan before removing it from the pan to cool on a wire rack.

Once the cake has completely cooled, sprinkle confectioner’s sugar on top. Store it an airtight cake container at room temperature or in the refrigerator.

Go back in time and make your family an old-fashion comfort food meal of Blue Ribbon Ham Casserole, Carrot, Apple, Raisin Salad and Ms. Nina’s Sour Cream Chocolate Cake. This Ham Casserole cooks on the stove-top. Carrot, Apple, Raisin Salad will bring fruit and crunch to your meal. Finish off your meal with Ms. Nina’s Sour Cream Chocolate Cake.

BLUE RIBBON HAM CASSEROLE
I believe, but cannot say for sure, that this recipe was cut from the back of a Parkay Margarine package.

1/4 cup chopped green bell pepper
1/4 cup chopped onion
1 tbsp Parkey margarine
1/2 lb Velveeta pasteurized process cheese spread, cubed
1/4 cup milk
3 cups chopped cooked potatoes
3/4 cup chopped ham
1/4 tsp salt

Saute green pepper and onion in margarine. Add process cheese spread and milk; stir until completely melted. Add remaining ingredients; mix well. Heat, stirring constantly, until bubbly and heated through.
4 to 6 servings.

CARROT, APPLE, AND RAISIN SALAD
This recipe was popular in my childhood.

2 cups grated carrots
2 cups finely chopped apples
1/2 tsp lemon juice
1 cup raisins
1/4 cup chopped nuts
1/3 cup mayonnaise

After chopping apples, toss with 1/2 teaspoon lemon juice. Combine with the remaining ingredients, mix well. Sprinkle a few chopped nuts on top for garnish, if desired. Cover and refrigerate until serving time. Refrigerate any leftovers.

MS. NINA’S SOUR CREAM CHOCOLATE CAKE
2 cups sugar
1 cup sour cream
2 eggs
1 tsp vanilla
2 cups flour
1/2 cup cocoa
1 1/4 tsps baking soda
1/2 tsp salt
1 cup boiling water

Preheat oven to 350 degrees.

Mix sugar, sour cream,eggs, and vanilla together; mix well. Sift the flour, cocoa, baking soda, and salt together and add to the sugar mixture. After both mixtures are well blended, pour in the boiling water. Stir together to mix well. Pour into a greased 9 x 13-inch pan. Bake at 350 degrees for 30 to 35 minutes. Frost with your favorite frosting.
