Vintage Recipes: Roasted Pork Tenderloin With Vegetables and Apple Spice Cake

Comfort food is making a big comeback and what says comfort better than this old-fashion recipe for roasted pork tenderloin with vegetables meal?  Perhaps adding another old recipe for an Apple Spice Cake for dessert.  Yep, that’s it.  Double comfort.

ROASTED PORK TENDERLOIN AND VEGETABLES

2 pork tenderloins, about 3/4 lb each
2 lbs red potatoes, scrubbed and quartered
1 lb carrots, halved and cut into 2-inch pieces
1 medium onion, cut into wedges
1 tbsp olive oil
2 tsp dried rosemary, crushed
1 tsp sage
1/2 tsp salt
1/4 tsp pepper

Place tenderloins in a shallow roasting pan that has been lightly greased. Arrange the vegetables around the pork; drizzle with the oil. Combine the seasonings and sprinkle of the pork and the vegetables. Bake, uncovered, in a 450 degree oven for about 40 minutes or until a meat thermometer reads 160 degrees. Stir the vegetables occasionally during the cooking process.

Makes 6 servings. 3-oz of meat + 1 cup of vegetables equals 331 calories, 40 g carbs, and 28 g protein.

APPLE SPICE CAKE

This is an old newspaper clipping from the Bedford Daily Times Mail of Bedford, Indiana. The clipping doesn’t say but I imagine the recipe was in an “Appleacres” ad. Appleacres is a local business there that specializes in apples from their own apple orchards.

Mix together 2 cups chopped apples, 1 cup sugar and let stand for 15 minutes.
Add:
1 egg
1 cup flour
1/2 cup nuts
1/2 cup raisins
pinch of salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp soda
1/2 stick butter

Mix all together, pour into a greased pan and bake at 350 degrees for 25 to 30 minutes. Delicious!

This Vermont Breakfast Apple Cake is Perfect for Brunch (or any other time!)

For your next brunch serve this yummy Vermont Breakfast Apple Cake.  It is perfect with coffee or other hot drinks.  Don’t do brunch?  Never fear, this cake is good anytime!  Brew up a pot of coffee, cut yourself a slice of this cake, grab a good book and enjoy!

VERMONT BREAKFAST APPLE CAKE

1/2 butter

4 medium apples
1 tbsp ground cinnamon
1 cup + 1 tbsp Splenda

1 cup all-purpose flour (unbleached is best)
1 egg, lightly beaten
1 1/2 cups coarsely chopped walnuts

Preheat oven to 350 degrees.

In a medium saucepan, over medium heat, melt the butter and set aside to cool to room temperature.

Peel, core, and cut the apples into 1/4″ thick slices. Generously spray the bottom and sides of a 9-inch round cake pan with nonstick vegetable cooking spray.

Place the apple slices in a bowl with the cinnamon and 1 tablespoon of the sugar and toss to coat apples well. On the bottom of the prepared pan, place the apple slices in overlapping circles. If necessary, make a second layer to use all the apple slices.

Into a large mixing bowl,sift the 1 cup of sugar and the flour. Using a wire whisk, whisk in the egg and melted butter just until mixed (DO NOT OVERMIX). Fold in the walnuts and mix in. Pour the batter evenly over the apple slices in the baking pan; smooth the top with a rubber spatula.

Place pan on the center oven rack and bake about 40 to 45 minutes or until the cake is golden brown and a wooden toothpick inserted in center comes out clean. Cool on a wire rack for 15 minutes or until the pan is cool. When pan is cool, run a knife around the edge and invert the cake on a serving plate. Serve warm or at room temperature, topped with whipped cream, if desired.

Moist Apple Dessert Cake With Caramel Icing Recipe

During the fall when apples are in season here on the east coast, I enjoy baking a variety of recipes that use fresh picked apples from our local orchard. This particular recipe was given to me years ago by my grandmother, who was a fabulous baker for many years.

When it comes to making an apple dessert cake, this is my favorite recipe to use. You will want to dice down your peeled apples to about 1 to 1 1/2″ in size, so that the cake bakes evenly.

Ingredients:

2 cups granulated sugar
1 1/2 cups vegetable oil
3 eggs
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
3 cups peeled and diced apples
1 cup shredded coconut
1 cup pecans, chopped

Preheat oven to 350 degrees.

In a large bowl, cream together the sugar, vegetable oil and eggs until creamy and smooth. Slowly add in the all-purpose flour, baking soda, salt and vanilla extract. Mix until all ingredients are well combined. Fold in the diced apples, coconut and chopped pecans.

Note: This batter will be very stiff, if necessary, stir by hand.

Lightly spray a 9 x 13″ baking dish with nonstick cooking spray. Pour the cake batter into the pan. Place pan in a 350 degree oven and bake for 35 to 45 minutes or until the center is done. Remove cake to cool on a wire rack.

Caramel Icing Ingredients:

1 stick of butter, softened
1/4 cup milk
1 cup brown sugar, firmly packed

In a medium-sized saucepan, combine the butter, milk and brown sugar. Bring mixture to a full boil and boil for 3 minutes, stirring constantly to prevent scorching. Remove from heat and place mixture into a mixing bowl. Using an electric mixer, beat until its creamy and smooth. Spread icing across the top of your cooled cake.

Music by: Jason Shaw www.youtube.com Ingredients: 1 pkg. two layer spice cake mix 1 cup quick oats 1/2 cup shredded colby cheese 1/2 cup butter, softened 1 egg 1/4 cup quick oats 2 Tbsp. butter, softened 1 cup chopped walnuts 1/2 cup brown sugar 1/2 tsp. cinnamon 21-oz. can apple pie filling 1/2 cup raisins or dried currants, if desired Preparation: Preheat oven to 350 degrees F. Grease a 12″ round pizza pan or 13×9″ cake pan and set aside. Combine cake mix, 1 cup oats, cheese, and 1/2 cup butter in large bowl and mix until crumbly. Reserve 1 cup of these crumbs. Add egg to remaining crumbs and mix until combined. Press into greased pan and bake at 350 degrees F for 10 minutes. To reserved crumbs, add 1/4 cup oats, 2 Tbsp. butter, walnuts, brown sugar, and cinnamon and mix well. Remove crust from oven and spread with apple pie filling. Sprinkle with raisins or currants, if using, then top with reserved crumb mixture. Bake 15-25 minutes longer until crumbs are golden brown. Serve warm with vanilla ice cream. 12 servings
