Be My Valentine Chocolate Cake

Thursday, July 29th, 2010

This is the recipe for the cake my mother made every Valentines Day. She would bake the cake in 2 pans. One round, and one square. She then would turn the square cake to form a diamond, cut the round cake in half and attached each half to either side of the point of the diamond with frosting. She would then decorate with candies and write with red frosting “Be My Valentine”,. That is how the name came about. Try this recipe for a wonderful Valentine Day dessert.

HAWAIIAN FRUIT CAKE

2 cups all-purpose flour
2 cups granulated sugar
2 tsp baking soda
1/2 tsp salt
2 eggs, well beaten
1 can (20-oz) crushed pineapple in juice
2 tbsp butter, softened
1 cup chopped macadamia (or other) nuts

Preheat oven to 350 degrees. Grease and flour a 9 x 13-inch baking pan; set aside.

In a large mixing bowl mix the flour, sugar, baking soda, and salt together; add the butter and mix well. Mix the pineapple and egg together and add to the flour mixture along with the chopped nuts. Pour batter into the prepared pan and bake at 350 degrees for 45 minutes.

TOPPING:

1 pkg (8-oz) cream cheese
1/4 lb butter, softened at room temperature
1 tsp vanilla
1/4 tsp lemon extract
2 cups powdered sugar

“How to bake delicious caek.” Kinda.

Sunday, May 30th, 2010

Yes, I burp a lot. UUURP. It was my dad’s birthday on the 2nd, so I baked him delicious caek. Want to make some too? Cool. Here’s how: Preheat oven to 350. Make sure you have a nice big cake pan like the one I used. (Or you can half the recipe; that works too.) You need: 2 1/3 cups all purpose flour 1 1/2 cups sugar (or just 1 cup if you don’t want it that sweet) 1 tbsp baking powder 1 steek of butter NOTE: If you use unsalted butter, add 3/4 tsp salt. If you use salted butter, don’t worry about adding any salt. 2 eggs 1 cup of milk vanilla extract. anywhere from 1-2 teaspoons is good, but you can add a bit more if you want. Mix dry ingredients together in a… mixing bowl I guess. Soften the butter in the microwave (or leave it out until it’s room temperature/soft), and “cut” it into the flour/sugar/baking powder mix. Add the eggs, the milk, and the vanilla extract. Mix on low speed for 1 minute, then normal/high speed for 2 minutes. Pour batter into cake pan (make sure you grease it first), bake for 20-30 minutes, and voila! CAEK!

Recipe for chocolate fudge cake using box mix?

Sunday, March 28th, 2010

Is there a way to add something to a chocolate cake mix to make it a fudge cake? Also, is there a way to make the cake dense, like a bakery style cake? I was thinking that 2 eggs instead of 3 may do the trick.
