You can use a nice vanilla buttercream frosting instead.
You might like Mascarpone with is a triple cream Italian cream cheese. You could substitute that as well.

You can make a glaze flavored with orange or vanilla or a buttercream frosting

Use a good 7 minute frosting or even easier just sprinkle a little powdered sugar over the top of the cake.

Here’s an easy Buttercream Frosting recipe that I use for many cakes. It would be great on a Carrot Cake:
BUTTERCREAM FROSTING
1 lb. confectioners’ sugar
1/2 c. butter, softened
1 tsp. vanilla extract
3 tbsp. milk
In large bowl, beat together sugar, butter, vanilla and milk until smooth. If necessary add more milk until frosting is spreading consistency.

I have found that butter cream is the answer to most of life’s questions. Tastes great on carrot cake!

Swiss buttercream
Temper to 140 degrees over a double boiler
28oz regular sugar with 2 cups egg whites
then whip to stiff peaks.
add the following:
2 pounds butter
1 1/2 sticks margarine
2 tsp good vanilla
whip these up real fluffy to room temperature (but not melted)
The icing will be the consistancy of firm whipped cream, very light tasting and not too sweet. And there are no transfats like in other icings.
